Ingredients
- 2 cups full cream milk
- 1 cup sugar
- 1/2 cup water
- 1/2 tsp cardamom powder
- 2 tbsp ghee (clarified butter)
- A pinch of saffron (optional)
Instructions
- In a heavy-bottomed pan, add the milk and bring it to a simmer over medium heat.
- Stir the milk occasionally to prevent it from burning.
- Once the milk has reduced by about half, add sugar and water to the pan. Stir continuously until the sugar dissolves completely.
- Keep simmering and stirring, allowing the mixture to thicken.
- Once the mixture starts to become more solid and begins to leave the sides of the pan, add cardamom powder and ghee. Stir well.
- If you’re using saffron, add it now for a subtle aroma and color.
- Keep stirring until the mixture forms a smooth, thick consistency, and starts to leave the pan.
- Pour the mixture onto a greased plate or tray and press it evenly.
- Allow the milk cake to cool and set for 1-2 hours before cutting into squares or slices.
