Ingredients

  • 2 cups full cream milk
  • 1 cup sugar
  • 1/2 cup water
  • 1/2 tsp cardamom powder
  • 2 tbsp ghee (clarified butter)
  • A pinch of saffron (optional)

Instructions

  1. In a heavy-bottomed pan, add the milk and bring it to a simmer over medium heat.
  2. Stir the milk occasionally to prevent it from burning.
  3. Once the milk has reduced by about half, add sugar and water to the pan. Stir continuously until the sugar dissolves completely.
  4. Keep simmering and stirring, allowing the mixture to thicken.
  5. Once the mixture starts to become more solid and begins to leave the sides of the pan, add cardamom powder and ghee. Stir well.
  6. If you’re using saffron, add it now for a subtle aroma and color.
  7. Keep stirring until the mixture forms a smooth, thick consistency, and starts to leave the pan.
  8. Pour the mixture onto a greased plate or tray and press it evenly.
  9. Allow the milk cake to cool and set for 1-2 hours before cutting into squares or slices.
  10. Serve and enjoy your homemade milk cake!
