MILK BRIOCHE ROLLS recipe

Ingredients

  • 3 ½ cups (440g) all-purpose flour
  • ¼ cup (50g) granulated sugar
  • 1 packet (2 ¼ tsp) instant yeast
  • 1 tsp salt
  • ½ cup (120ml) warm whole milk
  • 3 large eggs, room temperature
  • ½ cup (115g) unsalted butter, softened and cubed
  • 1 egg (for egg wash)
  • 1 tbsp milk (for egg wash)

Instructions

  1. Activate Yeast:
    In a small bowl, mix the warm milk and a pinch of sugar. Sprinkle the yeast over it and let it sit for 5–10 minutes until frothy.
  2. Make the Dough:
    In a large bowl (or stand mixer), combine the flour, sugar, and salt. Add the yeast mixture and eggs. Mix until a shaggy dough forms.
  3. Incorporate Butter:
    Gradually add the softened butter, a few cubes at a time, kneading well after each addition. Continue kneading for about 10 minutes until the dough becomes smooth and elastic.
  4. First Rise:
    Place the dough in a greased bowl. Cover and let it rise in a warm place for 1½–2 hours, or until doubled in size.
  5. Shape the Rolls:
    Punch down the dough and divide it into 12 equal pieces. Shape each piece into a smooth ball and place them in a greased baking dish or on a lined baking sheet.
  6. Second Rise:
    Cover loosely and let the rolls rise for another 45 minutes to 1 hour until puffy.
  7. Prepare Egg Wash:
    Preheat your oven to 350°F (175°C). In a small bowl, whisk together 1 egg and 1 tablespoon of milk. Brush the tops of the rolls with the egg wash.
  8. Bake:
    Bake the rolls for 20–25 minutes, or until golden brown and cooked through.
  9. Cool and Serve:
    Let the rolls cool slightly before serving. Enjoy warm or at room temperature!
