Mexican White Trash Casserole Recipe

This hearty and flavorful casserole is a crowd-pleaser! It’s a simple dish with a unique combination of flavors and textures.

Ingredients:

  • 1 pound ground beef  
  • 1 onion, chopped  
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (4 ounce) can diced green chiles, undrained
  • 1 (10 ounce) can Rotel tomatoes and green chiles, undrained  
  • 1 cup sour cream
  • 1 (1 ounce) package taco seasoning
  • 1 (8 ounce) package cream cheese, softened
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 cup tortilla chips
  • 1 cup shredded cheddar cheese

Instructions:

  1. Brown the beef: In a large skillet over medium heat, brown the ground beef and onion. Drain off any excess grease.
  2. Combine ingredients: In a large bowl, combine the browned beef and onion, both cans of soup, green chiles, Rotel tomatoes, sour cream, taco seasoning, cream cheese, black beans, and corn. Stir until well combined.
  3. Assemble the casserole: Pour the mixture into a greased 9×13 inch baking dish. Top with tortilla chips and shredded cheddar cheese.
  4. Bake: Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until bubbly and hot.
