Mexican White Trash Casserole Recipe

This cheesy, crunchy casserole is a crowd-pleaser with its simple ingredients and easy preparation. It’s perfect for a weeknight dinner or a potluck.

Ingredients:

  • 1 bag Nacho-flavored tortilla chips, crushed  
  • 2 cups shredded cooked chicken
  • 1 can (10.75 oz) condensed cream of chicken soup
  • 1 can (10 oz) diced tomatoes and green chilies, undrained
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, combine crushed tortilla chips, cooked chicken, cream of chicken soup, diced tomatoes and chilies, cheddar cheese, sour cream, and green onions (if using). Mix well.
  3. Pour the mixture into the prepared baking dish.
  4. Bake for 25-30 minutes, or until bubbly and golden brown.
  5. Let the casserole cool for a few minutes before serving.

Tips:

  • For extra flavor, add a packet of taco seasoning to the casserole mixture.
  • Use rotisserie chicken for a quick and easy meal.
