Ingredients
- 200g (about 1½ cups) graham cracker crumbs or crushed digestive biscuits
- 3 tbsp melted butter
- 250g (1 cup) cream cheese, softened
- 200ml (¾ cup + 1 tbsp) sweetened condensed milk
- 200ml (¾ cup + 1 tbsp) heavy cream (chilled)
- 1 tsp vanilla extract
- Optional toppings: crushed nuts, fruit, cocoa powder, or grated chocolate
Instructions
- In a mixing bowl, combine graham cracker crumbs and melted butter. Mix until it resembles wet sand.
- Press the crumb mixture into the base of a serving dish or individual cups to form a crust. Chill in the fridge while you make the filling.
- In another bowl, whip the chilled heavy cream until soft peaks form. Set aside.
- In a separate bowl, beat cream cheese until smooth. Add condensed milk and vanilla extract, then mix until fully combined and creamy.
- Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
- Pour or spoon the filling over the chilled crust. Smooth the top with a spatula.
- Refrigerate for at least 1 hour to set (or enjoy immediately for a softer version).
- Top with your favorite garnish before serving.
