Mediterranean Tomato Basil Garlic Bread

Ingredients

  • 1 loaf of crusty Italian or French bread, halved lengthwise
  • 3 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil leaves, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded mozzarella cheese (optional)
  • 1/4 cup crumbled feta cheese
  • Balsamic glaze (for drizzling, optional)

Instructions

  1. Preheat Oven:
    Preheat your oven to 375°F (190°C).
  2. Prepare Garlic Oil:
    In a small pan, heat the olive oil over medium heat. Add minced garlic and sauté for 30–60 seconds until fragrant (don’t let it burn). Remove from heat.
  3. Assemble Bread:
    Place the bread halves cut-side up on a baking sheet. Brush the garlic-infused oil evenly over the bread.
  4. Add Toppings:
    Evenly distribute the cherry tomatoes and chopped basil over the bread. Sprinkle with salt and pepper. Add mozzarella if using, and top with crumbled feta.
  5. Bake:
    Bake in the oven for 10–12 minutes, or until the bread is golden and cheese is melted (if added).
  6. Serve:
    Remove from oven, let cool slightly, then drizzle with balsamic glaze if desired. Slice and serve warm.
