Mediterranean Tomato Basil Garlic Bread

Ingredients

  • 1 loaf French baguette or Italian bread, sliced in half lengthwise
  • 3 tbsp olive oil
  • 2–3 garlic cloves, minced
  • 2 medium ripe tomatoes, diced
  • 1/4 tsp sea salt (or to taste)
  • 1/4 tsp black pepper
  • 1/4 tsp red chili flakes (optional)
  • 1/2 cup shredded mozzarella cheese (optional for a cheesy version)
  • 1/4 cup chopped fresh basil leaves
  • Balsamic glaze (for drizzling, optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the garlic oil: In a small bowl, mix olive oil and minced garlic. Let it sit for 5 minutes to infuse.
  3. Toast the bread: Place the bread halves on a baking sheet, cut-side up. Brush generously with the garlic olive oil.
  4. Add toppings:
    • Sprinkle diced tomatoes evenly over the bread.
    • Season with salt, pepper, and chili flakes.
    • If using cheese, sprinkle mozzarella on top.
  5. Bake: Place the baking sheet in the oven and bake for 10–12 minutes, or until the bread is crispy and the cheese is melted and bubbly.
  6. Garnish: Remove from the oven. Sprinkle with chopped fresh basil and drizzle with balsamic glaze, if desired.
  7. Serve: Slice into portions and serve warm as an appetizer or side.
