Ingredients
- 1 loaf French baguette or Italian bread, sliced in half lengthwise
- 3 tbsp olive oil
- 2–3 garlic cloves, minced
- 2 medium ripe tomatoes, diced
- 1/4 tsp sea salt (or to taste)
- 1/4 tsp black pepper
- 1/4 tsp red chili flakes (optional)
- 1/2 cup shredded mozzarella cheese (optional for a cheesy version)
- 1/4 cup chopped fresh basil leaves
- Balsamic glaze (for drizzling, optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the garlic oil: In a small bowl, mix olive oil and minced garlic. Let it sit for 5 minutes to infuse.
- Toast the bread: Place the bread halves on a baking sheet, cut-side up. Brush generously with the garlic olive oil.
- Add toppings:
- Sprinkle diced tomatoes evenly over the bread.
- Season with salt, pepper, and chili flakes.
- If using cheese, sprinkle mozzarella on top.
- Bake: Place the baking sheet in the oven and bake for 10–12 minutes, or until the bread is crispy and the cheese is melted and bubbly.
- Garnish: Remove from the oven. Sprinkle with chopped fresh basil and drizzle with balsamic glaze, if desired.
- Serve: Slice into portions and serve warm as an appetizer or side.
