Mediterranean Spinach and Feta Crisps Recipe

These light and crispy appetizers are packed with the vibrant flavors of the Mediterranean. They’re perfect for parties, snacks, or a tasty addition to a meze platter.  

Ingredients:

  • 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry  
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried dill
  • 1/4 teaspoon red pepper flakes (optional)
  • Pinch of salt and black pepper
  • 1 package (13.8 ounces) refrigerated pizza dough or crescent roll dough.

Instructions:

  1. Prepare the Spinach Mixture:
    • Thaw the frozen spinach and squeeze out as much liquid as possible. This is crucial for crispy crisps.
    • In a medium bowl, combine the squeezed spinach, feta cheese, Parmesan cheese, minced garlic, olive oil, oregano, dill, red pepper flakes (if using), salt, and pepper. Mix well.
  2. Prepare the Dough:
    • Preheat your oven to 400°F (200°C).
    • If using pizza dough, roll it out on a lightly floured surface into a thin rectangle. If using crescent roll dough, unroll the dough and press the seams together to form a large rectangle.
    • Place the dough onto a parchment paper-lined baking sheet.
  3. Assemble the Crisps:
    • Spread the spinach and feta mixture evenly over the dough, leaving a small border around the edges.
    • You can now either proceed to bake the whole sheet, and then break it into pieces after baking, for a more rustic look, or you can cut the dough into smaller squares or triangles before baking.
  4. Bake the Crisps:
    • Bake for 15-20 minutes, or until the crust is golden brown and the edges are crispy.
    • Keep an eye on them, as cooking times can vary depending on your oven and the thickness of the dough.
  5. Cool and Serve:
    • Remove the baking sheet from the oven and let the crisps cool slightly.
    • If you baked the entire sheet, break or cut the crisps into desired sizes.
    • Serve warm or at room temperature.

Tips and Variations:

  • Add other vegetables: You can add finely chopped sun-dried tomatoes, artichoke hearts, or Kalamata olives to the spinach mixture for extra flavor.
  • Use different cheeses: Substitute ricotta, goat cheese, or mozzarella for the feta or Parmesan.
  • Spice it up: Add a pinch of cayenne pepper or a dash of hot sauce for a spicier kick.
  • Fresh herbs: Use fresh oregano and dill instead of dried for a more vibrant flavor.
  • Lemon zest: A little lemon zest added to the spinach mixture adds brightness.

  • Egg wash: for a golden brown crust, you can brush the edges of the dough with an egg wash before baking.
