Ingredients
- 2 (6 oz) cans salmon, drained and flaked (or use cooked fresh salmon)
- 1/2 cup breadcrumbs (or crushed crackers)
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup crumbled feta cheese
- 1/4 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- Zest of 1 lemon
- Juice of 1/2 lemon
- 2 tbsp olive oil (for frying)
Instructions
- Mix the ingredients:
In a large bowl, combine the salmon, breadcrumbs, red onion, parsley, feta, sun-dried tomatoes, garlic, oregano, salt, pepper, lemon zest, lemon juice, and beaten eggs. Mix until well incorporated. - Form patties:
Shape the mixture into 6–8 patties, depending on your preferred size. - Chill (optional):
For firmer patties, chill them in the refrigerator for 15–30 minutes. - Cook the patties:
Heat olive oil in a large skillet over medium heat. Cook the patties for 3–4 minutes on each side, or until golden brown and heated through. - Serve:
Serve warm with a side of tzatziki sauce, over a Greek salad, or tucked into pita bread with cucumbers and tomatoes.
