Mediterranean Salmon Patties

Ingredients

  • 2 (6 oz) cans salmon, drained and flaked (or use cooked fresh salmon)
  • 1/2 cup breadcrumbs (or crushed crackers)
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs, beaten
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 2 tbsp olive oil (for frying)

Instructions

  1. Mix the ingredients:
    In a large bowl, combine the salmon, breadcrumbs, red onion, parsley, feta, sun-dried tomatoes, garlic, oregano, salt, pepper, lemon zest, lemon juice, and beaten eggs. Mix until well incorporated.
  2. Form patties:
    Shape the mixture into 6–8 patties, depending on your preferred size.
  3. Chill (optional):
    For firmer patties, chill them in the refrigerator for 15–30 minutes.
  4. Cook the patties:
    Heat olive oil in a large skillet over medium heat. Cook the patties for 3–4 minutes on each side, or until golden brown and heated through.
  5. Serve:
    Serve warm with a side of tzatziki sauce, over a Greek salad, or tucked into pita bread with cucumbers and tomatoes.
