Ingredients
- 2 cans (14 oz) salmon, drained & flaked (or 1 lb fresh cooked salmon)
- 2 large eggs
- 1/2 cup breadcrumbs (or panko)
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tbsp sun-dried tomatoes, finely chopped
- 2 tbsp crumbled feta cheese
- 1 tbsp capers (optional, for tang)
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp black pepper
- 1/2 tsp salt (adjust to taste)
- 2 tbsp olive oil (for frying)
Instructions
- In a large bowl, combine salmon, eggs, breadcrumbs, onion, parsley, sun-dried tomatoes, feta, garlic powder, oregano, salt, and pepper.
- Mix well until the mixture holds together. If it feels too wet, add more breadcrumbs.
- Shape the mixture into small patties (about 8–10).
- Heat olive oil in a skillet over medium heat.
- Cook patties for 3–4 minutes on each side, until golden brown and crispy.
- Remove and drain on paper towels.
- Serve warm with a squeeze of lemon juice, tzatziki, or a light salad.
