Ingredients
- 1 lb ground beef (lean)
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, sliced (red or yellow for sweetness)
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup feta cheese, crumbled
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- 1/2 tsp chili flakes (optional for heat)
- Salt and pepper, to taste
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)
Instructions
1️⃣ Heat the Pan:
Heat olive oil in a large skillet over medium-high heat.
2️⃣ Sauté Aromatics:
Add diced onion and cook until softened, about 3 minutes. Stir in the garlic and cook for 30 seconds until fragrant.
3️⃣ Brown the Beef:
Add the ground beef, breaking it apart as it cooks. Season with paprika, oregano, cumin, chili flakes, salt, and pepper. Cook until beef is browned and cooked through, about 6-8 minutes.
4️⃣ Add the Veggies:
Toss in bell pepper, zucchini, and cherry tomatoes. Stir-fry for 4-5 minutes until vegetables are tender but still vibrant.
5️⃣ Finish with Flavor:
Stir in sliced olives and squeeze fresh lemon juice over everything. Adjust seasoning if needed.
6️⃣ Serve it Up:
Top with crumbled feta and fresh parsley for a bright, tangy finish.
🍽️ Serving Suggestions:
