- 4 large eggs
- 1/2 cup feta cheese, crumbled
- 1/2 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives, sliced
- 1/4 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
- Warm pita or crusty bread (for serving)
Instructions
- Preheat Oven: Set your oven to 375°F (190°C). Lightly grease a small baking dish or oven-safe skillet with olive oil.
- Prepare the Base: In the baking dish, combine cherry tomatoes, olives, bell pepper, red onion, and garlic. Drizzle with olive oil, sprinkle with oregano, paprika, red pepper flakes, salt, and black pepper. Toss everything together.
- Bake the Vegetables: Place the dish in the oven and bake for 10-12 minutes until the vegetables soften and release juices.
- Add the Feta & Eggs: Remove the dish from the oven, scatter the crumbled feta over the vegetables, then carefully crack the eggs on top, spacing them out evenly.
- Bake Again: Return to the oven and bake for another 10-15 minutes, or until the egg whites are set but the yolks are still slightly runny (or cook longer for firmer yolks).
- Garnish & Serve: Sprinkle with fresh parsley and serve warm with pita or crusty bread for dipping.
