Ingredients:
For the Meatloaf:
- 1 lb ground beef
- 1/2 lb ground pork
- 1 cup breadcrumbs
- 1/2 cup milk
- 1 egg, beaten
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
For the Glaze:
- 1/4 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp mustard
For the Mashed Potatoes:
- 2 lbs potatoes, peeled and cubed
- 1/4 cup butter
- 1/2 cup milk (warm)
- Salt and pepper to taste
Instructions:
- Prepare the Meatloaf: Preheat the oven to 375°F (190°C). In a large bowl, combine ground beef, pork, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper. Mix until well combined.
- Shape the mixture into a loaf and place it in a greased loaf pan or baking sheet.
- Make the Glaze: In a small bowl, mix ketchup, brown sugar, and mustard. Spread evenly over the meatloaf.
- Bake the meatloaf for 50-60 minutes, or until the internal temperature reaches 160°F (71°C). Let it rest for 10 minutes before slicing.
- Prepare the Mashed Potatoes: While the meatloaf is baking, boil the potatoes in a large pot of salted water until tender (about 15-20 minutes). Drain and return to the pot.
- Mash the potatoes with butter and warm milk until smooth. Season with salt and pepper to taste.
