Meatloaf with Smooth Mashed Potatoes Recipe

A comforting classic dish perfect for family dinners. Juicy, flavorful meatloaf pairs beautifully with creamy, buttery mashed potatoes.

Ingredients:
For the Meatloaf:

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 egg, beaten
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper

For the Glaze:

  • 1/4 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp mustard

For the Mashed Potatoes:

  • 2 lbs potatoes, peeled and cubed
  • 1/4 cup butter
  • 1/2 cup milk (warm)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Meatloaf: Preheat the oven to 375°F (190°C). In a large bowl, combine ground beef, pork, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper. Mix until well combined.
  2. Shape the mixture into a loaf and place it in a greased loaf pan or baking sheet.
  3. Make the Glaze: In a small bowl, mix ketchup, brown sugar, and mustard. Spread evenly over the meatloaf.
  4. Bake the meatloaf for 50-60 minutes, or until the internal temperature reaches 160°F (71°C). Let it rest for 10 minutes before slicing.
  5. Prepare the Mashed Potatoes: While the meatloaf is baking, boil the potatoes in a large pot of salted water until tender (about 15-20 minutes). Drain and return to the pot.
  6. Mash the potatoes with butter and warm milk until smooth. Season with salt and pepper to taste.
