Ingredients
- 2 cups mashed potatoes (leftovers work great!)
- 1 large egg
- ½ cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- 2 tablespoons chopped chives or green onions
- Salt and pepper to taste
- Optional: ¼ teaspoon garlic powder or onion powder
- Non-stick cooking spray or butter (for greasing muffin tin)
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin with non-stick spray or butter.
- In a mixing bowl, combine the mashed potatoes, egg, cheddar cheese, Parmesan cheese, and chives. Season with salt, pepper, and any optional seasonings you like. Mix well until everything is evenly incorporated.
- Spoon the mixture into the prepared muffin tin, filling each cup nearly to the top. You can lightly press the tops with a spoon to smooth them.
- Bake for 20–25 minutes, or until the tops are golden brown and crispy.
- Let the potato puffs cool in the pan for about 5 minutes, then gently remove with a spoon or butter knife.
- Serve warm as a snack, appetizer, or side dish.
