Ingredients

  • 2 cups mashed potatoes (leftovers work great!)
  • 1 large egg
  • ½ cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped chives or green onions
  • Salt and pepper to taste
  • Optional: ¼ teaspoon garlic powder or onion powder
  • Non-stick cooking spray or butter (for greasing muffin tin)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin with non-stick spray or butter.
  2. In a mixing bowl, combine the mashed potatoes, egg, cheddar cheese, Parmesan cheese, and chives. Season with salt, pepper, and any optional seasonings you like. Mix well until everything is evenly incorporated.
  3. Spoon the mixture into the prepared muffin tin, filling each cup nearly to the top. You can lightly press the tops with a spoon to smooth them.
  4. Bake for 20–25 minutes, or until the tops are golden brown and crispy.
  5. Let the potato puffs cool in the pan for about 5 minutes, then gently remove with a spoon or butter knife.
  6. Serve warm as a snack, appetizer, or side dish.
