Ingredients
- 2 cups mashed potatoes (preferably cooled)
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/4 cup finely chopped green onions or chives
- 1/4 cup all-purpose flour (or more if needed)
- 1 egg, lightly beaten
- Salt and pepper to taste
- 1/2 tsp garlic powder (optional)
- 1/2 tsp paprika or smoked paprika (optional)
- Oil for frying (vegetable or canola)
Instructions
- In a large bowl, combine the mashed potatoes, shredded cheese, green onions, flour, egg, salt, pepper, and optional spices. Mix until well combined.
- Shape the mixture into small balls or oval puffs (about 1-2 inches each).
- Heat oil in a frying pan over medium heat. You need enough to cover at least half of the puff.
- Fry the puffs in batches until golden brown and crispy, about 3-4 minutes per side.
- Remove with a slotted spoon and drain on paper towels.
- Serve hot with ketchup, sour cream, or your favorite dip.
Tips
- Make sure mashed potatoes are slightly cooled; warm potatoes make the mixture too soft to shape.
- For extra crispiness, roll the puffs lightly in breadcrumbs before frying.
- You can bake them at 400°F (200°C) for 15–20 minutes instead of frying for a healthier option.
- Add cooked bacon bits or sautéed mushrooms for a flavor twist.
- Serve immediately for the best texture; puffs can get soft if left out too long.
