Mashed Potato Puffs

Ingredients

  • 2 cups mashed potatoes (leftover or freshly made, cooled)
  • 1 large egg
  • ½ cup shredded cheddar cheese (or cheese of choice)
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped chives or green onions
  • 2 tablespoons sour cream (optional for extra creaminess)
  • Salt and pepper to taste
  • Butter or oil spray (for greasing muffin tin)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a muffin tin with butter or nonstick spray.
  2. In a large mixing bowl, combine the mashed potatoes, egg, cheddar cheese, Parmesan, chives, and sour cream (if using). Season with salt and pepper.
  3. Mix until everything is well incorporated and smooth.
  4. Spoon the potato mixture into the muffin cups, filling each about ¾ full. You can slightly mound them for a nice puffed look.
  5. Bake for 20–25 minutes, or until the tops are golden brown and the edges are crispy.
  6. Let cool for a few minutes, then carefully remove from the muffin tin.
