Ingredients
- 2 cups mashed potatoes (leftover or freshly made, cooled)
- 1 large egg
- ½ cup shredded cheddar cheese (or cheese of choice)
- ¼ cup grated Parmesan cheese
- 2 tablespoons chopped chives or green onions
- 2 tablespoons sour cream (optional for extra creaminess)
- Salt and pepper to taste
- Butter or oil spray (for greasing muffin tin)
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a muffin tin with butter or nonstick spray.
- In a large mixing bowl, combine the mashed potatoes, egg, cheddar cheese, Parmesan, chives, and sour cream (if using). Season with salt and pepper.
- Mix until everything is well incorporated and smooth.
- Spoon the potato mixture into the muffin cups, filling each about ¾ full. You can slightly mound them for a nice puffed look.
- Bake for 20–25 minutes, or until the tops are golden brown and the edges are crispy.
- Let cool for a few minutes, then carefully remove from the muffin tin.
