Mashed Potato Puffs

Ingredients

  • 2 cups mashed potatoes (preferably cooled)
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup finely chopped green onions or chives
  • 1/4 cup all-purpose flour (or more if needed)
  • 1 egg, lightly beaten
  • Salt and pepper to taste
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp paprika or smoked paprika (optional)
  • Oil for frying (vegetable or canola)

Instructions

  1. In a large bowl, combine the mashed potatoes, shredded cheese, green onions, flour, egg, salt, pepper, and optional spices. Mix until well combined.
  2. Shape the mixture into small balls or oval puffs (about 1-2 inches each).
  3. Heat oil in a frying pan over medium heat. You need enough to cover at least half of the puff.
  4. Fry the puffs in batches until golden brown and crispy, about 3-4 minutes per side.
  5. Remove with a slotted spoon and drain on paper towels.
  6. Serve hot with ketchup, sour cream, or your favorite dip.

Tips

  • Make sure mashed potatoes are slightly cooled; warm potatoes make the mixture too soft to shape.
  • For extra crispiness, roll the puffs lightly in breadcrumbs before frying.
  • You can bake them at 400°F (200°C) for 15–20 minutes instead of frying for a healthier option.
  • Add cooked bacon bits or sautéed mushrooms for a flavor twist.
  • Serve immediately for the best texture; puffs can get soft if left out too long.
