  • Salt and pepper, to taste
  • 2 eggs, beaten
  • 1/2 cup breadcrumbs (for coating)
  • Cooking spray or oil (for greasing)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and grease a baking sheet with cooking spray or lightly coat with oil.
  2. Prepare the Potato Mixture: In a large bowl, combine the mashed potatoes, shredded cheddar cheese, sour cream, melted butter, grated Parmesan, green onions, garlic powder, onion powder, salt, and pepper. Stir until well mixed.
  3. Add Eggs: Beat the eggs and mix them into the potato mixture, ensuring everything is well incorporated.
