Mashed Potato Muffins

Ingredients

  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • ½ cup all-purpose flour
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ cup chopped green onions (optional)
  • Salt and pepper to taste
  • Nonstick cooking spray or muffin liners

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) and prepare a muffin tin with nonstick cooking spray or muffin liners.
  2. Mix the ingredients: In a large bowl, combine the mashed potatoes, shredded cheddar cheese, eggs, flour, garlic powder, onion powder, and green onions. Mix until well combined. Season with salt and pepper to taste.
  3. Fill the muffin tin: Spoon the potato mixture into the prepared muffin tin, filling each cup about ¾ full. Smooth the tops with the back of a spoon.
  4. Bake: Place the muffin tin in the preheated oven and bake for 20–25 minutes or until the tops are golden brown and the muffins are set.
  5. Cool and serve: Let the muffins cool slightly before removing them from the tin. Serve warm as a side dish or snack.
