- 2 cups leftover mashed potatoes
- 1 cup shredded cheddar cheese
- 2 large eggs
- ½ cup all-purpose flour
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ cup chopped green onions (optional)
- Salt and pepper to taste
- Nonstick cooking spray or muffin liners
Instructions
- Preheat the oven: Set your oven to 375°F (190°C) and prepare a muffin tin with nonstick cooking spray or muffin liners.
- Mix the ingredients: In a large bowl, combine the mashed potatoes, shredded cheddar cheese, eggs, flour, garlic powder, onion powder, and green onions. Mix until well combined. Season with salt and pepper to taste.
- Fill the muffin tin: Spoon the potato mixture into the prepared muffin tin, filling each cup about ¾ full. Smooth the tops with the back of a spoon.
- Bake: Place the muffin tin in the preheated oven and bake for 20–25 minutes or until the tops are golden brown and the muffins are set.
- Cool and serve: Let the muffins cool slightly before removing them from the tin. Serve warm as a side dish or snack.
