Ingredients

  • 200g feta cheese, cut into cubes
  • ½ cup extra virgin olive oil
  • 2–3 garlic cloves, thinly sliced
  • Zest of 1 lemon
  • 1 tsp dried oregano (or use fresh thyme or rosemary)
  • ½ tsp red chili flakes (optional, for heat)
  • Fresh herbs (like rosemary, thyme, or parsley)
  • Cracked black pepper, to taste
  • A few strips of lemon peel (optional)

Instructions

  1. Prep the Feta: Cut the feta cheese into bite-sized cubes and pat dry with a paper towel to remove excess moisture.
  2. Layer in a Jar: Place half of the feta cubes in a clean jar or container. Add a few garlic slices, herbs, lemon zest, chili flakes, and pepper. Repeat with the remaining feta and aromatics.
  3. Add Olive Oil: Pour olive oil into the jar until the feta is fully submerged. Add a few lemon peels for extra fragrance if desired.
  4. Marinate: Seal the jar and refrigerate for at least 6 hours, preferably overnight, to allow the flavors to develop.
  5. Serve: Bring to room temperature before serving. Serve with crusty bread, crackers, olives, or use to top salads and roasted vegetables.

Storage Tip:
Marinated feta can be stored in the refrigerator for up to one week. Always ensure the cheese is covered with oil to keep it fresh.
