Ingredients:

For the Pork Chops:

  • 4 bone-in or boneless pork chops, about 1 to 1.5 inches thick (approximately 2-2.5 lbs total)
  • 1 tablespoon olive oil or vegetable oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Salt to taste

For the Maple-Dijon Glaze:

  • 1/4 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes (optional, for a touch of heat)
  • 1 tablespoon unsalted butter

For Optional Garnish:

  • Chopped fresh parsley or thyme

Instructions:

1. Prepare the Pork Chops:

Remove the pork chops from the refrigerator about 15-20 minutes before cooking to allow them to come to room temperature, which promotes more even cooking. Pat the pork chops dry thoroughly with paper towels. This step is crucial for achieving a good sear. Season both sides of the pork chops generously with salt, smoked paprika, garlic powder, and black pepper. Ensure the seasoning is evenly distributed.

2. Sear the Pork Chops:

Heat the olive oil (or vegetable oil) in a large skillet, preferably cast iron, over medium-high heat until it is shimmering. Carefully place the seasoned pork chops in the hot skillet, ensuring not to overcrowd the pan. If necessary, cook the chops in batches to maintain the heat and achieve a proper sear. Sear the pork chops for approximately 3-4 minutes per side, or until they develop a rich golden-brown crust. The goal at this stage is to create flavor and color; the chops will finish cooking in the glaze.

3. Make the Maple-Dijon Glaze:

While the pork chops are searing, prepare the maple-Dijon glaze. In a small bowl, whisk together the pure maple syrup, Dijon mustard, apple cider vinegar, Worcestershire sauce, minced garlic, and red pepper flakes (if using). Set this glaze aside.

4. Glaze the Pork Chops:

Once the pork chops are nicely seared on both sides, reduce the heat to medium-low. Add the tablespoon of unsalted butter to the skillet and let it melt. Pour the prepared maple-Dijon glaze over the pork chops. Ensure each chop is well coated with the sauce.

5. Simmer and Glaze:

Allow the pork chops to simmer gently in the glaze for another 5-7 minutes, flipping them occasionally to ensure they are evenly coated and cooked through. The glaze will begin to thicken and caramelize, creating a beautiful, glossy coating on the pork chops. Monitor the heat to prevent the glaze from burning; if it reduces too quickly, you can add a tablespoon of water or chicken broth to thin it slightly. The internal temperature of the pork chops should reach 145°F (63°C) for safe consumption. Use a meat thermometer inserted into the thickest part of the chop (avoiding the bone if using bone-in chops) to check for doneness.

6. Rest the Pork Chops:

Once the pork chops are cooked through and beautifully glazed, remove them from the skillet and place them on a clean plate. Tent them loosely with aluminum foil and let them rest for 5-10 minutes. Resting allows the juices to redistribute throughout the meat, resulting in more tender and flavorful pork chops.

7. Finish and Serve:

While the pork chops are resting, the glaze in the skillet might have thickened further. You can spoon any remaining glaze over the rested pork chops. Garnish with freshly chopped parsley or thyme, if desired, for a touch of freshness and color. Serve these delicious Maple-Dijon Glazed Pork Chops immediately with your favorite side dishes and enjoy the wonderful balance of sweet and savory flavors!
