A light and airy mango mousse, perfect for a refreshing dessert.
Ingredients:
- 2 ripe mangoes (about 500g flesh)
- 1 cup heavy cream (240ml)
- 1/4 cup granulated sugar (50g)
- 2 tablespoons lemon juice
- 1 teaspoon gelatin powder (or agar agar for vegetarian option)
- 2 tablespoons cold water (if using gelatin)
- Optional: Fresh mango slices or mint leaves for garnish
Instructions:
- Prepare the Mango Puree:
- Peel and chop the mangoes.
- Blend the mango pieces in a blender or food processor until smooth.
- Strain the puree through a fine-mesh sieve to remove any fibers, ensuring a smooth mousse.
- Soften the Gelatin (if using):
- In a small bowl, sprinkle the gelatin powder over the cold water.
- Let it sit for 5 minutes to soften.
- If using Agar Agar follow the instructions on the packet.
- Heat the Gelatin (if using):
- Heat the softened gelatin in the microwave for 10-15 seconds, or over a double boiler, until it dissolves completely. Do not boil.
- Combine Ingredients:
- In a medium bowl, combine the mango puree, sugar, and lemon juice.
- If using gelatin, add the dissolved gelatin to the mango mixture and stir well.
- Whip the Cream:
- In a separate large bowl, using an electric mixer, whip the heavy cream until stiff peaks form.
- Fold in the Cream:
- Gently fold the whipped cream into the mango mixture, being careful not to deflate the cream.
- Mix until the mixture is evenly combined and light.
- Chill:
- Pour the mousse into individual serving glasses or bowls.
- Cover and refrigerate for at least 3-4 hours, or until set.
- Garnish and Serve:
- Before serving, garnish with fresh mango slices or mint leaves, if desired.
