Mango Chicken Bowl Recipe

This vibrant and flavorful Mango Chicken Bowl is a healthy and satisfying meal. It features juicy grilled chicken, a refreshing mango salsa, and a bed of fluffy rice.

Ingredients:

  • For the Chicken:
    • 2 boneless, skinless chicken breasts
    • 2 tablespoons olive oil
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1/4 teaspoon garlic powder
    • 1/4 teaspoon onion powder
  • For the Mango Salsa:
    • 1 ripe mango, diced
    • 1/2 red onion, finely chopped
    • 1/4 cup chopped cilantro
    • 1 jalapeño, minced (optional, for extra spice)
    • 1 lime, juiced
    • Salt and pepper to taste
  • For the Rice:
    • 1 cup long-grain rice
    • 2 cups water
    • 1/4 teaspoon salt
  • Toppings (optional):
    • Avocado slices
    • Shredded lettuce
    • Sour cream or Greek yogurt

Instructions:

  1. Prepare the Chicken:
    • In a large bowl, combine chicken breasts with olive oil, salt, pepper, garlic powder, and onion powder.
    • Grill, broil, or pan-fry the chicken until cooked through and slightly charred, about 6-8 minutes per side. Let it rest for a few minutes before slicing.
  2. Make the Mango Salsa:
    • In a medium bowl, combine diced mango, red onion, cilantro, jalapeño (if using), lime juice, salt, and pepper.
    • Mix well and set aside.
  3. Cook the Rice:
    • Bring water and salt to a boil in a saucepan.
