Ingredients:

For the Crust:

  • 1 ½ cups graham cracker crumbs (about 10-12 full graham crackers)
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the Mango Cheesecake Filling:

  • 3 (8 ounce) packages cream cheese, softened
  • 1 ½ cups granulated sugar
  • 1 cup mango puree (from about 2-3 ripe mangoes)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 4 large eggs
  • 2 tablespoons lime or lemon juice (optional, for brightness)

For the Mango Topping/Glaze:

  • 1 cup mango puree
  • 1 tablespoon granulated sugar (optional, depending on mango sweetness)
  • 1 teaspoon gelatin powder or 1 teaspoon agar-agar powder
  • 2 tablespoons cold water (if using gelatin)

For Decoration: Fresh mango cubes, blueberries, raspberries, mint leaves

Equipment:

  • 9-inch springform pan  
  • Mixing bowls
  • Electric mixer
  • Rubber spatula
  • Measuring cups and spoons
  • Blender or food processor (for mango puree)
  • Small saucepan (for mango glaze)
  • Parchment paper (optional, for lining)

Instructions:

  1. Preheat Oven and Prepare Crust: Preheat oven to 350°F (175°C). For the crust, combine the graham cracker crumbs and sugar in a medium bowl. Pour in the melted butter and stir until well combined. Press the mixture firmly into the bottom of the springform pan to create an even layer. You can also press it slightly up the sides if desired.  
  2. Prepare Mango Puree: Peel and chop the ripe mangoes. Blend the mango chunks in a blender or food processor until smooth. Measure out the required amount for the filling and the topping.
  3. Prepare Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar and beat until well combined. Beat in the mango puree, vanilla extract, and salt until smooth. If using, stir in the lime or lemon juice. Beat in the eggs one at a time, mixing just until each is incorporated. Be careful not to overmix.  
  4. Bake the Cheesecake: Pour the mango cheesecake filling over the prepared crust in the springform pan. Bake in the preheated oven for 55-70 minutes, or until the edges of the cheesecake are set and the center is just slightly jiggly.
  5. Cool Completely: Once baked, turn off the oven and leave the cheesecake in the oven with the door slightly ajar for 1 hour to allow it to cool gradually. Remove the cheesecake from the oven and let it cool completely on a wire rack at room temperature.
  6. Prepare Mango Topping/Glaze: If using gelatin, sprinkle the gelatin powder over the cold water in a small bowl and let it bloom for 5 minutes. In a small saucepan, combine the mango puree and sugar (if using). Heat over low heat until just simmering. Remove from heat and stir in the bloomed gelatin until dissolved. If using agar-agar, combine the mango puree, sugar (if using), and agar-agar powder in a small saucepan. Bring to a boil, then reduce heat and simmer for 2-3 minutes, stirring constantly, until the agar-agar is dissolved. Let the glaze cool slightly.
  7. Chill Cheesecake and Add Topping: Once the cheesecake is completely cooled, pour the slightly cooled mango glaze evenly over the top. Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow it to chill and set completely.
