Ingredients
- 1 cup rolled oats
- 2 medium apples (peeled and grated or finely chopped)
- 2 eggs
- 1 ripe banana (for natural sweetness)
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 cup milk (any kind – dairy or plant-based)
- 1/2 tsp vanilla extract (optional)
- A pinch of salt
- Handful of nuts or raisins (optional)
Instructions
- In a blender or food processor, blend the oats into a coarse flour.
- Add the grated apples, banana, eggs, milk, cinnamon, baking powder, salt, and vanilla (if using). Blend until combined but not overly smooth.
- Stir in nuts or raisins if desired.
- Pour the batter into a greased microwave-safe mug or bowl.
- Microwave on high for 3–5 minutes, or until firm and cooked through (time depends on microwave strength).
- Let it cool slightly, then enjoy your healthy, naturally sweetened cake!
