Ingredients

  • 1 cup rolled oats
  • 2 medium apples (peeled and grated or finely chopped)
  • 2 eggs
  • 1 ripe banana (for natural sweetness)
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 cup milk (any kind – dairy or plant-based)
  • 1/2 tsp vanilla extract (optional)
  • A pinch of salt
  • Handful of nuts or raisins (optional)

Instructions

  1. In a blender or food processor, blend the oats into a coarse flour.
  2. Add the grated apples, banana, eggs, milk, cinnamon, baking powder, salt, and vanilla (if using). Blend until combined but not overly smooth.
  3. Stir in nuts or raisins if desired.
  4. Pour the batter into a greased microwave-safe mug or bowl.
  5. Microwave on high for 3–5 minutes, or until firm and cooked through (time depends on microwave strength).
  6. Let it cool slightly, then enjoy your healthy, naturally sweetened cake!
