Macaroni Salad

Ingredients

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced celery
  • 1/2 cup diced red bell pepper
  • 1/2 cup chopped red onion
  • 1/4 cup sweet pickle relish
  • 1/4 teaspoon garlic powder (optional)
  • 1 hard-boiled egg (chopped, optional)

Instructions

  1. Cook the elbow macaroni according to package instructions. Drain and rinse with cold water until completely cooled.
  2. In a large bowl, combine the mayonnaise, apple cider vinegar, Dijon mustard, salt, pepper, and garlic powder (if using). Stir to combine.
  3. Add the cooled macaroni, celery, red bell pepper, red onion, and sweet pickle relish to the dressing. Stir until everything is evenly coated.
  4. Gently fold in the chopped hard-boiled egg if desired.
  5. Cover the bowl and refrigerate the salad for at least an hour before serving to allow the flavors to meld.
  6. Serve chilled and enjoy!

You can adjust the ingredients to suit your taste, such as adding more veggies or a different type of relish!
