Ingredients
- 2 cups elbow macaroni
- 1 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced celery
- 1/2 cup diced red bell pepper
- 1/2 cup chopped red onion
- 1/4 cup sweet pickle relish
- 1/4 teaspoon garlic powder (optional)
- 1 hard-boiled egg (chopped, optional)
Instructions
- Cook the elbow macaroni according to package instructions. Drain and rinse with cold water until completely cooled.
- In a large bowl, combine the mayonnaise, apple cider vinegar, Dijon mustard, salt, pepper, and garlic powder (if using). Stir to combine.
- Add the cooled macaroni, celery, red bell pepper, red onion, and sweet pickle relish to the dressing. Stir until everything is evenly coated.
- Gently fold in the chopped hard-boiled egg if desired.
- Cover the bowl and refrigerate the salad for at least an hour before serving to allow the flavors to meld.
- Serve chilled and enjoy!
