- 1 cup all-purpose flour
- 2 tbsp corn starch
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp sugar
- 1 tsp salt
- 1/4 tsp paprika (optional for flavor)
- 1 cup club soda (or cold sparkling water)
- 1 egg (beaten)
- Vegetable oil (for frying)
Instructions
- In a large bowl, whisk together flour, corn starch, baking powder, baking soda, sugar, salt, and paprika.
- Add the beaten egg and slowly whisk in the club soda until you get a smooth, slightly thick batter. (Do not overmix – small lumps are fine.)
- Heat vegetable oil in a deep fryer or heavy skillet to 350–365°F (175–185°C).
- Pat fish fillets (or chicken, shrimp, onion rings, etc.) dry with paper towels. Lightly dust with flour so the batter sticks better.
- Dip into the batter, letting the excess drip off.
- Fry in hot oil until golden brown and crispy, about 3–4 minutes per side, depending on thickness.
- Drain on paper towels. Serve hot with tartar sauce, malt vinegar, or your favorite dipping sauce.
