Long John Silver’s Batter

INGREDENT

  • 1 cup all-purpose flour
  • 2 tbsp corn starch
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp sugar
  • 1 tsp salt
  • 1/4 tsp paprika (optional for flavor)
  • 1 cup club soda (or cold sparkling water)
  • 1 egg (beaten)
  • Vegetable oil (for frying)

Instructions

  1. In a large bowl, whisk together flour, corn starch, baking powder, baking soda, sugar, salt, and paprika.
  2. Add the beaten egg and slowly whisk in the club soda until you get a smooth, slightly thick batter. (Do not overmix – small lumps are fine.)
  3. Heat vegetable oil in a deep fryer or heavy skillet to 350–365°F (175–185°C).
  4. Pat fish fillets (or chicken, shrimp, onion rings, etc.) dry with paper towels. Lightly dust with flour so the batter sticks better.
  5. Dip into the batter, letting the excess drip off.
  6. Fry in hot oil until golden brown and crispy, about 3–4 minutes per side, depending on thickness.
  7. Drain on paper towels. Serve hot with tartar sauce, malt vinegar, or your favorite dipping sauce.
