- 3/4 cup all-purpose flour
- 2 tablespoons cornstarch
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon onion powder (optional)
- 1/4 teaspoon paprika (optional)
- 1/2 cup cold water (plus more as needed for consistency)
- 1 egg, beaten
- Vegetable oil (for frying)
Instructions
- In a mixing bowl, whisk together flour, cornstarch, baking soda, baking powder, salt, and optional spices like onion powder and paprika.
- Add the beaten egg and cold water to the dry ingredients.
- Stir until a smooth batter forms. It should be slightly thick but pourable. Add a little extra water if needed.
- Heat oil in a deep fryer or deep skillet to 350–375°F (175–190°C).
- Dip fish fillets, chicken, or vegetables into the batter, allowing the excess to drip off.
- Carefully place into hot oil and fry until golden brown and crispy (about 3–5 minutes depending on the size).
- Remove and drain on paper towels. Serve hot with tartar sauce or malt vinegar.
