Loaded Tater Tot Nachos (Totchos)

Ingredients

  • 1 bag (32 oz) frozen tater tots
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cooked and crumbled ground beef (or chicken, or black beans for a vegetarian option)
  • 1/4 cup diced red onion
  • 1/4 cup sliced jalapeños (fresh or pickled)
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/4 cup sour cream
  • 1/4 cup guacamole
  • Salsa (optional)
  • Fresh cilantro (for garnish)
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Spread the frozen tater tots on a baking sheet in a single layer.
  2. Bake the tater tots according to the package instructions, usually around 20-25 minutes, until crispy and golden brown.
  3. While the tots are baking, prepare your toppings. Cook the ground beef in a skillet over medium heat, seasoning with salt, pepper, and any additional spices you prefer.
  4. Once the tater tots are done, remove them from the oven and transfer them to a large platter or keep them on the baking sheet.
  5. Evenly sprinkle the shredded cheddar and mozzarella cheese over the hot tater tots.
  6. Add the cooked ground beef (or your protein of choice), diced red onion, and sliced jalapeños on top of the cheese.
  7. Return the loaded tater tots to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and top with diced tomatoes, green onions, sour cream, guacamole, and salsa (optional).
  9. Garnish with fresh cilantro and serve immediately for the best crispy experience!
