Ingredients

For the Meatloaf:

  • 1 ½ lbs ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • ½ cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 1 cup shredded cheddar cheese
  • 2 tbsp ketchup (for topping)

For the Loaded Potato Topping:

  • 3 cups mashed potatoes (prepared and seasoned)
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 2 green onions, sliced
  • 2 tbsp sour cream (optional, for garnish)

Instructions

  1. Preheat Oven to 375°F (190°C).
  2. Prepare Meatloaf Mixture: In a large bowl, mix ground beef, breadcrumbs, egg, milk, onion, garlic, salt, pepper, Worcestershire sauce, and 1 cup shredded cheddar. Mix until well combined.
  3. Shape the Loaf: Form the mixture into a loaf shape and place it in a greased loaf pan or on a lined baking sheet.
  4. Bake the Meatloaf: Bake for 35–40 minutes, or until nearly cooked through.
  5. Top with Potatoes: Remove from oven. Spread mashed potatoes evenly over the top of the meatloaf. Sprinkle shredded cheese and crumbled bacon on top.
  6. Final Bake: Return to oven and bake an additional 10–15 minutes, until cheese is melted and bubbly.
  7. Garnish and Serve: Remove from oven, let it rest for a few minutes. Top with sliced green onions and a dollop of sour cream if desired.
