Ingredients
For the Meatloaf:
- 1 ½ lbs ground beef
- 1 cup breadcrumbs
- 1 egg
- ½ cup milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp Worcestershire sauce
- 1 cup shredded cheddar cheese
- 2 tbsp ketchup (for topping)
For the Loaded Potato Topping:
- 3 cups mashed potatoes (prepared and seasoned)
- 1 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- 2 green onions, sliced
- 2 tbsp sour cream (optional, for garnish)
Instructions
- Preheat Oven to 375°F (190°C).
- Prepare Meatloaf Mixture: In a large bowl, mix ground beef, breadcrumbs, egg, milk, onion, garlic, salt, pepper, Worcestershire sauce, and 1 cup shredded cheddar. Mix until well combined.
- Shape the Loaf: Form the mixture into a loaf shape and place it in a greased loaf pan or on a lined baking sheet.
- Bake the Meatloaf: Bake for 35–40 minutes, or until nearly cooked through.
- Top with Potatoes: Remove from oven. Spread mashed potatoes evenly over the top of the meatloaf. Sprinkle shredded cheese and crumbled bacon on top.
- Final Bake: Return to oven and bake an additional 10–15 minutes, until cheese is melted and bubbly.
- Garnish and Serve: Remove from oven, let it rest for a few minutes. Top with sliced green onions and a dollop of sour cream if desired.
