Instructions
- Preheat Oven:
Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper. - Prepare the Meatloaf Mixture:
In a large bowl, combine ground beef, breadcrumbs, egg, milk, onion, garlic, Worcestershire sauce, salt, pepper, and parsley. Mix well until fully incorporated. - Shape and Bake the Meatloaf:
Press the meat mixture into the prepared loaf pan. Bake for 35–40 minutes. - Make the Loaded Potato Topping:
In a bowl, mix the mashed potatoes with sour cream, half of the cheddar cheese, salt, and pepper. Stir in crumbled bacon (save some for topping) and green onions. - Top the Meatloaf:
Remove meatloaf from oven after the initial bake. Spread the mashed potato mixture evenly on top. Sprinkle with remaining cheese and extra bacon. - Final Bake:
Return to the oven and bake for another 15–20 minutes, or until cheese is melted and bubbly. - Cool and Serve:
Let the meatloaf rest for 5–10 minutes before slicing. Garnish with extra green onions if desired.
