Lime Mousse Recipe

  • 2 tablespoons water (if using gelatin)

Instructions:

  1. Prepare Gelatin (if using): If you want a firmer mousse, sprinkle the gelatin over the water in a small bowl. Let it sit for about 5 minutes to bloom. Then, gently heat in the microwave for about 10-15 seconds until dissolved. Set aside to cool slightly.
  2. Whip Cream: In a large mixing bowl, whip the heavy cream and powdered sugar together until soft peaks form. Be careful not to overwhip. Fold in the lime juice and lime zest gently until combined. If using gelatin, mix it in at this point.
  3. Beat Egg Whites: In another bowl, beat the egg whites with the cream of tartar until stiff peaks form.
