Lemon Tiramisu


This Lemon Tiramisu is a bright, citrusy twist on the classic Italian dessert. Layers of delicate ladyfingers are soaked in a lemony syrup, then combined with a creamy mascarpone filling. Perfect for a refreshing and elegant dessert that will impress at any gathering!


Ingredients

For the Lemon Syrup:

  • 1 cup fresh lemon juice (about 4-5 lemons)
  • 1/2 cup water
  • 1/2 cup sugar
  • Zest of 2 lemons

For the Mascarpone Cream:

  • 1 1/2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon

For Assembly:

  • 24-30 ladyfingers (savoiardi)
  • Lemon slices and zest (for garnish)
  • Powdered sugar (optional, for dusting)

Instructions

  1. Prepare the Lemon Syrup:
    In a small saucepan, combine the lemon juice, water, sugar, and lemon zest. Heat over medium heat, stirring until the sugar dissolves. Bring the mixture to a simmer for 2-3 minutes, then remove from heat and let it cool completely.
  2. Make the Mascarpone Cream:
    In a mixing bowl, whisk the mascarpone cheese until smooth. In a separate bowl, whip the heavy cream, powdered sugar, vanilla extract, and lemon zest until soft peaks form. Gently fold the whipped cream into the mascarpone mixture until well combined and creamy.
  3. Assemble the Tiramisu:
    Dip each ladyfinger into the cooled lemon syrup for 1-2 seconds (don’t oversoak). Place a layer of soaked ladyfingers at the bottom of a 9×9-inch (or similar) dish.
  4. Layer the Cream:
    Spread half of the mascarpone cream mixture over the ladyfingers. Add another layer of dipped ladyfingers on top, followed by the remaining mascarpone cream.
  5. Chill:
    Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for the best flavor.
  6. Serve:
