Ingredients
- 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 1 tsp lemon zest
- 2 tbsp fresh lemon juice
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp red pepper flakes (optional, for spice)
- 1 tbsp unsalted butter
- 2 tbsp fresh parsley (chopped)
Instructions
- In a bowl, toss the chicken pieces with salt, black pepper, paprika, and red pepper flakes (if using).
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 5-7 minutes, stirring occasionally, until golden brown and cooked through.
- Reduce the heat to medium and add the butter and minced garlic. Sauté for 1 minute until fragrant.
- Stir in the lemon zest and lemon juice, tossing the chicken to coat evenly. Cook for another 1-2 minutes.
- Remove from heat and garnish with fresh parsley.
- Serve hot with rice, roasted veggies, or a side of your choice.
