Lemon & Garlic Chicken Bites recipe

Ingredients

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 tsp lemon zest
  • 2 tbsp fresh lemon juice
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional, for spice)
  • 1 tbsp unsalted butter
  • 2 tbsp fresh parsley (chopped)

Instructions

  1. In a bowl, toss the chicken pieces with salt, black pepper, paprika, and red pepper flakes (if using).
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 5-7 minutes, stirring occasionally, until golden brown and cooked through.
  3. Reduce the heat to medium and add the butter and minced garlic. Sauté for 1 minute until fragrant.
  4. Stir in the lemon zest and lemon juice, tossing the chicken to coat evenly. Cook for another 1-2 minutes.
  5. Remove from heat and garnish with fresh parsley.
  6. Serve hot with rice, roasted veggies, or a side of your choice.
