Ingredients
- 1 cup graham cracker crumbs
- 2 tbsp sugar
- 4 tbsp melted butter
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 tsp vanilla extract
- 1 tbsp lemon zest
- 1/4 cup fresh lemon juice
- 1 cup whipped cream or whipped topping
Instructions
- Make the crust: In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a small baking dish or into cups for individual servings. Chill while making the filling.
- Prepare the filling: Beat cream cheese until smooth. Add powdered sugar, vanilla, lemon zest, and lemon juice. Beat until creamy.
- Fold in whipped cream: Gently fold in the whipped cream until smooth and fluffy.
- Assemble: Spoon the lemon cream mixture over the crust. Smooth the top.
- Chill: Refrigerate for at least 2 hours, or until set.
- Serve: Garnish with extra lemon zest or whipped cream if desired.
