Lemon Cream Cheese Bars Recipe

Ingredients:

For the crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup powdered sugar
  • Pinch of salt

For the filling:

  • 8 ounces cream cheese, softened  
  • 1/2 cup granulated sugar  
  • 3 large eggs
  • 1/3 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 cup all-purpose flour

Instructions:

Make the crust:

  1. In a medium bowl, whisk together flour, powdered sugar, and salt.
  2. Cut in butter until mixture resembles coarse crumbs.
  3. Press the dough into a greased 9×13 inch baking pan.
  4. Bake in preheated 350°F (175°C) oven for 15-20 minutes, or until lightly golden.

Make the filling:

  1. In a large bowl, beat together cream cheese and granulated sugar until smooth.
  2. Beat in eggs one at a time, then stir in lemon juice, lemon zest, and flour until combined.
  3. Pour the filling over the hot crust.

Bake:

  1. Bake for 30-35 minutes, or until set.
  2. Let cool completely before cutting into bars.
