Ingredients:
For the crust:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup powdered sugar
- Pinch of salt
For the filling:
- 8 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 3 large eggs
- 1/3 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1/4 cup all-purpose flour
Instructions:
Make the crust:
- In a medium bowl, whisk together flour, powdered sugar, and salt.
- Cut in butter until mixture resembles coarse crumbs.
- Press the dough into a greased 9×13 inch baking pan.
- Bake in preheated 350°F (175°C) oven for 15-20 minutes, or until lightly golden.
Make the filling:
- In a large bowl, beat together cream cheese and granulated sugar until smooth.
- Beat in eggs one at a time, then stir in lemon juice, lemon zest, and flour until combined.
- Pour the filling over the hot crust.
Bake:
- Bake for 30-35 minutes, or until set.
- Let cool completely before cutting into bars.
