Ingredients:

  • For the crust:
    • 1 cup all-purpose flour
    • 1/4 cup granulated sugar
    • 1/2 cup unsalted butter, softened
  • For the filling:
    • 8 oz cream cheese, softened
    • 1/2 cup granulated sugar
    • 2 large eggs
    • 1/4 cup lemon juice (freshly squeezed)
    • 1 tbsp lemon zest
    • 1/2 tsp vanilla extract
  • For the topping:
    • Powdered sugar (optional)

Instructions:

  1. Prepare the crust:
    • Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
    • In a medium bowl, mix together the flour, 1/4 cup sugar, and softened butter until the mixture resembles coarse crumbs.
    • Press the mixture firmly into the bottom of the prepared baking dish to form an even layer.
    • Bake the crust for 15 minutes, or until it turns golden brown. Remove from oven and set aside to cool.
  2. Make the filling:
    • In a large bowl, beat the softened cream cheese and 1/2 cup sugar together until smooth and creamy.
    • Add the eggs, one at a time, beating well after each addition.
    • Mix in the lemon juice, lemon zest, and vanilla extract until well combined.
  3. Assemble and bake:
    • Pour the cream cheese mixture over the pre-baked crust and spread it out evenly.
    • Bake for an additional 25-30 minutes, or until the center is set and the edges are lightly browned.
    • Remove from the oven and allow the bars to cool completely.
  4. Chill and serve:
    • Once cooled, refrigerate the bars for at least 2 hours to firm up.
    • Before serving, dust the top with powdered sugar if desired.
    • Cut into squares and enjoy!
