Ingredients

  • 2 salmon fillets
  • 2 medium potatoes, diced
  • 1 cup broccoli florets
  • 2 tbsp unsalted butter, melted
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes (optional)
  • 1 tbsp fresh parsley, chopped
  • Lemon wedges for serving

Instructions

  1. Preheat the Oven – Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the Potatoes – In a bowl, toss the diced potatoes with 1 tbsp olive oil, 1 minced garlic clove, paprika, thyme, oregano, salt, and black pepper. Spread them evenly on one side of the baking sheet.
  3. Roast the Potatoes – Place the potatoes in the preheated oven and roast for about 15 minutes to give them a head start.
  4. Prepare the Broccoli – While the potatoes are roasting, toss the broccoli florets in a bowl with 1 tbsp olive oil, a pinch of salt, and black pepper.
  5. Add the Broccoli to the Pan – After 15 minutes, remove the baking sheet from the oven and add the broccoli next to the potatoes.
  6. Season the Salmon – Pat the salmon fillets dry with a paper towel. In a small bowl, mix melted butter, lemon juice, lemon zest, 2 minced garlic cloves, and red pepper flakes (if using). Brush this mixture generously over the salmon fillets.
  7. Place the Salmon on the Baking Sheet – Arrange the seasoned salmon fillets on the empty side of the baking sheet.
  8. Bake Everything Together – Return the baking sheet to the oven and bake for another 12-15 minutes until the salmon is cooked through and flakes easily with a fork.
  9. Broil for a Crispy Finish – For a slightly crispy texture, switch the oven to broil mode for the last 2 minutes. Keep an eye on it to avoid burning.
  10. Garnish and Serve – Remove from the oven, sprinkle fresh parsley on top, and serve immediately with lemon wedges for extra zest.
