Ingredients
- 2 salmon fillets
- 2 medium potatoes, diced
- 1 cup broccoli florets
- 2 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 tsp paprika
- ½ tsp black pepper
- ½ tsp salt
- ½ tsp dried oregano
- ½ tsp dried thyme
- ¼ tsp red pepper flakes (optional)
- 1 tbsp fresh parsley, chopped
- Lemon wedges for serving
Instructions
- Preheat the Oven – Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the Potatoes – In a bowl, toss the diced potatoes with 1 tbsp olive oil, 1 minced garlic clove, paprika, thyme, oregano, salt, and black pepper. Spread them evenly on one side of the baking sheet.
- Roast the Potatoes – Place the potatoes in the preheated oven and roast for about 15 minutes to give them a head start.
- Prepare the Broccoli – While the potatoes are roasting, toss the broccoli florets in a bowl with 1 tbsp olive oil, a pinch of salt, and black pepper.
- Add the Broccoli to the Pan – After 15 minutes, remove the baking sheet from the oven and add the broccoli next to the potatoes.
- Season the Salmon – Pat the salmon fillets dry with a paper towel. In a small bowl, mix melted butter, lemon juice, lemon zest, 2 minced garlic cloves, and red pepper flakes (if using). Brush this mixture generously over the salmon fillets.
- Place the Salmon on the Baking Sheet – Arrange the seasoned salmon fillets on the empty side of the baking sheet.
- Bake Everything Together – Return the baking sheet to the oven and bake for another 12-15 minutes until the salmon is cooked through and flakes easily with a fork.
- Broil for a Crispy Finish – For a slightly crispy texture, switch the oven to broil mode for the last 2 minutes. Keep an eye on it to avoid burning.
- Garnish and Serve – Remove from the oven, sprinkle fresh parsley on top, and serve immediately with lemon wedges for extra zest.
