Lemon Blueberry Loaf Recipe

A delightful and zesty loaf filled with sweet blueberries and a tangy lemon flavor. Perfect for a morning snack or afternoon tea.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened  
  • 1 large egg
  • 1/2 cup buttermilk
  • 1 teaspoon grated lemon zest
  • 1 tablespoon lemon juice
  • 1 cup fresh blueberries

Instructions:

  1. Preheat oven: Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. Combine dry ingredients: In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Cream butter and sugar: In a separate large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add wet ingredients: Beat in the egg, buttermilk, lemon zest, and lemon juice until well combined.
  5. Combine dry and wet ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Fold in blueberries: Gently fold in the blueberries until evenly distributed.  
  7. Pour into pan: Pour the batter into the prepared loaf pan.
  8. Bake: Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool: Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
