Lemon Bar Cookie Cups Recipe

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 ¾ cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup lemon curd (store-bought or homemade)
  • Powdered sugar for dusting

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add in the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Divide the dough into small balls and press them into the prepared muffin tin, forming small cups by pressing the dough up the sides.
  7. Bake the cookie cups for 10-12 minutes or until they are lightly golden around the edges.
  8. Remove the tin from the oven and use a spoon to gently press down the center of each cup if they puffed up during baking.
  9. Allow the cookie cups to cool completely in the tin before removing them.
  10. Once cooled, fill each cookie cup with lemon curd.
  11. Lightly dust with powdered sugar before serving.
