Layered Beef and Mashed Potato Casserole Recipe

A hearty and comforting casserole that’s perfect for a family dinner. This dish combines tender beef, creamy mashed potatoes, and rich gravy for a satisfying meal.

Ingredients:

For the Beef:

  • 1.5 pounds lean ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 can (10.75 ounces) cream of mushroom soup
  • 1 can (10.75 ounces) cream of celery soup
  • 1 cup beef broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper

For the Mashed Potatoes:

  • 4 large russet potatoes, peeled and cubed
  • 1/4 cup butter
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Cook the Beef: Brown the ground beef in a large skillet over medium heat. Drain off any excess grease. Add the onion and bell pepper to the skillet and cook until softened.
  2. Combine the Beef Mixture: Stir in the cream of mushroom soup, cream of celery soup, beef broth, thyme, and black pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until thickened.
  3. Prepare the Mashed Potatoes: Boil the cubed potatoes in a large pot of salted water until tender. Drain well. Mash the potatoes with butter, milk, salt, and pepper until smooth.
  4. Assemble the Casserole: Spread half of the mashed potatoes in the bottom of a 9×13 inch baking dish. Top with the beef mixture. Cover with the remaining mashed potatoes.
  5. Bake: Bake in a preheated 350°F (175°C) oven for 30-35 minutes, or until bubbly and golden brown.
