Ingredients
- 4 cups chicken or beef broth
- 1 tbsp gochujang (Korean red chili paste)
- 1 tbsp gochugaru (Korean red pepper flakes)
- 2 tbsp soy sauce
- 2 cloves garlic, minced
- 1 tsp sugar
- 1/2 tsp black pepper
- 1 pack instant ramen noodles
- 4 oz Spam, sliced
- 4 oz hot dogs, sliced
- 1/2 block tofu, sliced
- 1/2 cup kimchi, chopped
- 1/2 cup enoki or shiitake mushrooms
- 1/2 cup napa cabbage, chopped
- 1/4 cup green onions, chopped
- 1/2 cup baked beans (optional)
- 1/2 cup rice cakes (tteok), soaked (optional)
- 1 slice American cheese
Instructions
- Prepare the broth: In a large pot, mix the broth, gochujang, gochugaru, soy sauce, garlic, sugar, and black pepper. Bring to a simmer.
- Layer the ingredients: Arrange the Spam, hot dogs, tofu, kimchi, mushrooms, cabbage, and baked beans in the pot.
- Simmer: Let everything cook for about 10 minutes, allowing the flavors to meld together.
- Add noodles & rice cakes: Place the ramen noodles and rice cakes in the pot. Simmer until the noodles are cooked (about 3–5 minutes).
- Top with cheese & green onions: Just before serving, place a slice of American cheese on top and garnish with green onions.
- Serve hot: Enjoy with steamed rice and extra kimchi on the side!
