Ingredients

  • 2 low-carb tortillas (or cheese wraps)
  • ½ cup shredded mozzarella cheese
  • 8–10 slices pepperoni
  • 2 tbsp low-carb pizza sauce (or marinara sauce)
  • 1 tbsp olive oil or butter (for pan)
  • ½ tsp Italian seasoning (optional)
  • Grated Parmesan cheese (optional, for topping)

Instructions

  1. Heat a non-stick skillet over medium heat and add a little olive oil or butter.
  2. Place one low-carb tortilla (or cheese wrap) on the skillet.
  3. Spread 1 tbsp pizza sauce evenly over the tortilla.
  4. Sprinkle half the mozzarella cheese on top, then layer the pepperoni slices evenly.
  5. Sprinkle the remaining mozzarella and a little Italian seasoning.
  6. Place the second tortilla on top to make a quesadilla.
  7. Cook for about 2–3 minutes per side, pressing gently, until the tortillas are golden and the cheese is melted.
  8. Slide onto a plate, cut into wedges, and optionally sprinkle with Parmesan cheese.
