- 2 low-carb tortillas (or cheese wraps)
- ½ cup shredded mozzarella cheese
- 8–10 slices pepperoni
- 2 tbsp low-carb pizza sauce (or marinara sauce)
- 1 tbsp olive oil or butter (for pan)
- ½ tsp Italian seasoning (optional)
- Grated Parmesan cheese (optional, for topping)
Instructions
- Heat a non-stick skillet over medium heat and add a little olive oil or butter.
- Place one low-carb tortilla (or cheese wrap) on the skillet.
- Spread 1 tbsp pizza sauce evenly over the tortilla.
- Sprinkle half the mozzarella cheese on top, then layer the pepperoni slices evenly.
- Sprinkle the remaining mozzarella and a little Italian seasoning.
- Place the second tortilla on top to make a quesadilla.
- Cook for about 2–3 minutes per side, pressing gently, until the tortillas are golden and the cheese is melted.
- Slide onto a plate, cut into wedges, and optionally sprinkle with Parmesan cheese.
- Serve hot with extra low-carb pizza sauce for dipping.
