Keto-Friendly Cheesy Zucchini Bake Recipe

A simple, flavorful, and low-carb side dish perfect for any meal. This cheesy zucchini bake is packed with flavor and is a great way to use up fresh zucchini.  

Ingredients:

  • 2 medium zucchini, sliced into 1/4-inch rounds
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese (or any other keto-friendly cheese)
  • 1/4 cup grated Parmesan cheese  
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional, for a little heat)
  • Salt and pepper to taste

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Zucchini: Wash the zucchini and slice them into 1/4-inch rounds.
  3. Sauté the Garlic: Heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 30 seconds, until fragrant. Be careful not to burn it.
  4. Add Zucchini and Spices: Add the zucchini slices to the skillet. Season with salt, pepper, oregano, basil, and red pepper flakes (if using). Cook for about 5-7 minutes, stirring occasionally, until the zucchini is slightly softened.
  5. Assemble the Bake: Transfer the zucchini to a greased baking dish (an 8×8 inch dish works well).
  6. Add the Cheese: Sprinkle the mozzarella, cheddar, and Parmesan cheeses evenly over the zucchini.
  7. Bake: Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and golden brown.
  8. Cool and Serve: Let it cool for a few minutes before serving.
