  2. Add Lemon Juice: Once the milk is heated, remove it from the heat and add the fresh lemon juice. Stir gently to mix. Let the milk sit for about 3-5 minutes, allowing it to curdle and separate into curds and whey.
  3. Drain the Curds: Place a fine mesh strainer or cheesecloth over a bowl and pour the curdled milk through it. Let the whey drain out for about 3-4 minutes. You can gently press the curds to help them release more whey if desired.
  4. Season and Shape the Cheese: Transfer the curds to a bowl. Add salt to taste and mix well. For a firmer texture, you can wrap the curds in cheesecloth and press gently.
