JAMAICAN BANANA BREAD

Ingredients

  • 3 to 4 ripe bananas (mashed)
  • 1 cup sugar (can use brown sugar for more flavor)
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (optional)
  • 1/2 teaspoon ground nutmeg (optional)
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins or dried fruit (optional)

Instructions

  1. Preheat Oven
    Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Mix Wet Ingredients
    In a large bowl, cream together the softened butter and sugar until light and fluffy.
    Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
    Mix in the mashed bananas until combined.
  3. Combine Dry Ingredients
    In another bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  4. Mix Together
    Gradually add the dry ingredients to the banana mixture. Stir just until combined.
    Fold in the nuts and raisins if using.
  5. Bake
    Pour the batter into the prepared loaf pan. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve
    Let the bread cool in the pan for about 10 minutes, then remove it and cool completely on a wire rack before slicing.
