- 3 to 4 ripe bananas (mashed)
- 1 cup sugar (can use brown sugar for more flavor)
- 1/2 cup unsalted butter (softened)
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon (optional)
- 1/2 teaspoon ground nutmeg (optional)
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup raisins or dried fruit (optional)
Instructions
- Preheat Oven
Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan. - Mix Wet Ingredients
In a large bowl, cream together the softened butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Mix in the mashed bananas until combined. - Combine Dry Ingredients
In another bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. - Mix Together
Gradually add the dry ingredients to the banana mixture. Stir just until combined.
Fold in the nuts and raisins if using. - Bake
Pour the batter into the prepared loaf pan. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean. - Cool and Serve
Let the bread cool in the pan for about 10 minutes, then remove it and cool completely on a wire rack before slicing.
