Instructions
- Make the pastry dough:
- In a mixing bowl, combine flour and sugar.
- Rub the cold butter into the flour using your fingertips until the mixture resembles breadcrumbs.
- Add the egg yolk and 2 tbsp cold water. Mix until the dough comes together — add a little more water if needed.
- Wrap the dough in plastic wrap and chill for 20-30 minutes.
- Preheat the oven:
- Set your oven to 375°F (190°C). Lightly grease a muffin or tart tin.
- Roll out the dough:
- Roll the dough on a floured surface to about 1/8-inch thick.
- Use a round cutter slightly larger than your tart tin wells to cut circles of dough.
- Assemble the tarts:
- Gently press the dough circles into the muffin tin.
- Spoon about a teaspoon of jam into each tart — don’t overfill to avoid bubbling over.
- Bake:
- Bake for 12-15 minutes or until the pastry is golden and the jam is bubbling.
- Let the tarts cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
- Optional dusting:
- Once cooled, lightly dust with powdered sugar for a sweet finish.
