Ingredients

  • 3 cups all-purpose flour

  • 1 ½ cups shredded cheddar cheese (or a mix of cheeses)
  • 1 ½ cups milk
  • 1 egg
  • 3 tbsp melted butter (plus extra for brushing)
  • 1 tsp garlic powder (optional, for extra flavor)
  • 1 tbsp chopped fresh parsley or chives (optional)

Instructions

  1. Preheat oven to 180°C (350°F). Grease and flour a loaf pan or line with parchment paper.
  2. In a large bowl, mix flour, sugar, salt, and baking powder.
  3. Stir in shredded cheese, making sure it’s coated in flour (this helps prevent sinking).
  4. In a separate bowl, whisk milk, egg, and melted butter until well combined.
  5. Pour wet ingredients into dry ingredients and mix until just combined — do not overmix.
  6. Fold in garlic powder and herbs if using.
  7. Transfer batter into prepared loaf pan. Smooth the top and sprinkle a little extra cheese.
  8. Bake for 40–45 minutes or until a toothpick inserted into the center comes out clean.
  9. Brush with a little melted butter after baking for extra softness.
  10. Let cool slightly before slicing. Serve warm for breakfast with butter or jam.
