Ingredients:

  • 1 lb (450g) ground beef
  • 1 lb (450g) ground pork
  • 1 cup breadcrumbs (Italian seasoned)
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup marinara sauce
  • 1 tbsp olive oil
  • Fresh basil leaves (for garnish)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
  2. Sauté the onions and garlic: In a small skillet, heat the olive oil over medium heat. Add the onions and sauté until softened, about 3-4 minutes. Add minced garlic and cook for another minute. Remove from heat and let cool.
  3. Prepare the meat mixture: In a large bowl, combine the ground beef, ground pork, breadcrumbs, grated Parmesan, cooled onion-garlic mixture, eggs, milk, parsley, oregano, basil, salt, and pepper. Mix everything until just combined—avoid overmixing to ensure a tender meatloaf.
  4. Add the cheese layer: Divide the meat mixture in half. Press half of it into the loaf pan. Sprinkle 1 cup of shredded mozzarella cheese evenly over the meat. Then, cover with the remaining meat mixture and press down firmly to create a compact loaf.
  5. Bake the meatloaf: Pour half of the marinara sauce over the top of the meatloaf. Cover the pan with foil and bake for 45 minutes.
  6. Add more sauce and cheese: After 45 minutes, remove the foil. Pour the remaining marinara sauce on top and sprinkle the remaining mozzarella cheese over the meatloaf. Return to the oven and bake uncovered for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  7. Let it rest: Once baked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This will allow the juices to redistribute and make slicing easier.
  8. Serve: Garnish with fresh basil leaves and serve with a side of roasted vegetables or pasta.

Enjoy this hearty, cheesy, and Italian-inspired meatloaf that’s sure to become a new family favorite!
