- 2 tbsp sugar
- 2 tsp instant yeast

- Activate the Yeast:
In a large bowl, combine warm milk, sugar, and yeast. Let sit for 5–10 minutes until frothy. - Mix the Dough:
Beat in the egg and salt. Gradually add flour, mixing until a soft dough forms. Add softened butter if using. - Knead:
Knead the dough on a floured surface for 8–10 minutes until smooth and elastic. (Or use a stand mixer with a dough hook for 6–7 minutes.) - First Rise:
Place the dough in a greased bowl, cover with a towel, and let rise in a warm spot for 1 hour or until doubled in size. - Shape the Rolls:
Punch down the dough, divide into 8–12 equal pieces, and shape into balls. Arrange them in a greased baking pan. - Second Rise:
Cover and let rise for another 30–45 minutes, until puffy. - Bake:
Preheat oven to 350°F (175°C). Brush tops with a little milk or egg wash. Bake for 18–22 minutes until golden brown. - Cool and Serve:
