  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg (optional)
  • 1 ½ cups diced fresh peaches (or well-drained canned peaches)
  • ½ cup old-fashioned oats (optional, for cobbler texture)
  • ½ cup white chocolate chips or chopped pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  4. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Gently fold in the diced peaches and oats (and white chocolate chips or nuts if using).
  7. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12–15 minutes, or until the edges are golden and the centers are set.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
