Ingredients:
- For the Bites:
- 1 lb ground beef (or turkey)
- 1 cup shredded cheddar cheese
- ½ cup cream cheese, softened
- 1 cup frozen corn, thawed
- ½ cup diced bell pepper (any color)
- ¼ cup diced onion
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp cumin
- ½ tsp salt
- ½ tsp black pepper
- 1 package of mini phyllo pastry cups (about 15-20 cups)
- For Garnish:
- Chopped fresh parsley or cilantro
- Sour cream or your choice of dipping sauce
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
- Prepare the Filling: In a large skillet over medium heat, add the ground beef (or turkey). Cook until browned, breaking it up with a spatula, about 5-7 minutes. Drain excess fat if necessary.
- Add Vegetables and Spices: Add the diced onion, bell pepper, and minced garlic to the skillet. Cook for an additional 3-4 minutes until the vegetables are softened. Stir in the thawed corn, smoked paprika, cumin, salt, and black pepper. Cook for another 2 minutes, allowing the flavors to meld. Remove from heat.
- Combine with Cheeses: In a mixing bowl, combine the cooked meat mixture with the shredded cheddar cheese and softened cream cheese. Mix until well combined and creamy.
- Fill the Phyllo Cups: Spoon the filling into the mini phyllo pastry cups, filling each one generously.
- Bake: Place the filled cups on the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until the phyllo is golden brown and crispy.
- Garnish and Serve: Remove from the oven and let cool slightly. Garnish with chopped parsley or cilantro. Serve warm with sour cream or your favorite dipping sauce.
