- 1/3 head of cabbage
- 1/4 teaspoon salt (for cabbage)
- 1-2 cucumbers
- 1/4 teaspoon salt (for cucumbers)
- 1/2 onion
- 1 teaspoon rice vinegar
- 1/3 head of red cabbage
- 1 carrot
- 20g walnuts
Instructions
- Prepare the vegetables:
- Finely shred the cabbage and red cabbage, then place them in a large mixing bowl. Sprinkle with 1/4 teaspoon of salt, toss well, and set aside to allow the cabbage to soften slightly.
- Slice the cucumbers and onions thinly. Add the cucumbers to the mixing bowl with the cabbage.
- Peel and grate the carrot, and add it to the salad mixture.
- Make the dressing:
- In a small bowl, combine the rice vinegar with a pinch of salt and stir to dissolve. If you like a bit of sweetness, you can add a tiny drizzle of honey.
- Assemble the salad:
- Pour the dressing over the cabbage, cucumber, and carrot mixture, tossing everything to combine well.
- Finish with walnuts:
