INGREDIENTS

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 tablespoon sugar (optional, for slight sweetness)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/2 cup finely chopped onion
  • 1 large egg
  • 3/4 cup buttermilk (or milk with 1 tsp vinegar or lemon juice added)
  • Oil, for deep frying

Instructions

  1. Heat oil in a deep skillet or fryer to 350°F (175°C).
  2. In a large bowl, whisk together cornmeal, flour, sugar (if using), baking powder, baking soda, salt, onion powder, and garlic powder.
  3. Stir in the chopped onion.
  4. In a small bowl, whisk together the egg and buttermilk.
  5. Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.
  6. Carefully drop heaping teaspoons or tablespoons of the batter into the hot oil.
  7. Fry for about 2-3 minutes per side, or until golden brown and crisp.
  8. Remove with a slotted spoon and drain on paper towels.
  9. Serve warm with dipping sauce or alongside fried fish or barbecue!
