INGREDIENTS
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 tablespoon sugar (optional, for slight sweetness)
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/2 cup finely chopped onion
- 1 large egg
- 3/4 cup buttermilk (or milk with 1 tsp vinegar or lemon juice added)
- Oil, for deep frying
Instructions
- Heat oil in a deep skillet or fryer to 350°F (175°C).
- In a large bowl, whisk together cornmeal, flour, sugar (if using), baking powder, baking soda, salt, onion powder, and garlic powder.
- Stir in the chopped onion.
- In a small bowl, whisk together the egg and buttermilk.
- Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.
- Carefully drop heaping teaspoons or tablespoons of the batter into the hot oil.
- Fry for about 2-3 minutes per side, or until golden brown and crisp.
- Remove with a slotted spoon and drain on paper towels.
- Serve warm with dipping sauce or alongside fried fish or barbecue!
