Ingredients
- 4 cups broccoli florets, chopped
- 2 Honeycrisp apples, diced
- 1/2 cup dried cranberries
- 1/2 cup roasted sunflower seeds
- 1/3 cup red onion, finely diced
- 1/2 cup shredded sharp cheddar cheese (optional)
- 1/2 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 2 tbsp honey
- 1 tbsp apple cider vinegar
- Salt and pepper, to taste
Instructions
- Prepare the Vegetables and Apples
Chop the broccoli into small florets. Dice the Honeycrisp apples into bite-sized pieces. Finely dice the red onion. - Make the Dressing
In a small bowl, whisk together the Greek yogurt, mayonnaise, honey, apple cider vinegar, salt, and pepper. Adjust seasoning as desired. - Combine Ingredients
In a large mixing bowl, combine the broccoli, diced apples, dried cranberries, sunflower seeds, red onion, and shredded cheese (if using). - Add the Dressing
Pour the dressing over the salad ingredients and toss until everything is evenly coated. - Chill
Cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld. - Serve
Serve chilled and enjoy as a side dish or light meal!
