Honeycrisp Apple Broccoli Salad

Ingredients

  • 4 cups broccoli florets, chopped
  • 2 Honeycrisp apples, diced
  • 1/2 cup dried cranberries
  • 1/2 cup roasted sunflower seeds
  • 1/3 cup red onion, finely diced
  • 1/2 cup shredded sharp cheddar cheese (optional)
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar
  • Salt and pepper, to taste

Instructions

  1. Prepare the Vegetables and Apples
    Chop the broccoli into small florets. Dice the Honeycrisp apples into bite-sized pieces. Finely dice the red onion.
  2. Make the Dressing
    In a small bowl, whisk together the Greek yogurt, mayonnaise, honey, apple cider vinegar, salt, and pepper. Adjust seasoning as desired.
  3. Combine Ingredients
    In a large mixing bowl, combine the broccoli, diced apples, dried cranberries, sunflower seeds, red onion, and shredded cheese (if using).
  4. Add the Dressing
    Pour the dressing over the salad ingredients and toss until everything is evenly coated.
